Premium Handtmann cutting set for integrated inline grinding

With its new, original Premium Handtmann cutting set (PH), Handtmann now offers the optimal synchronisation of state-of-the-art vacuum filling technology, inline grinding and separating technology with perfectly coordinated cutting set as well as the option of smart cutting set management. This technology can be universally applied in all production processes of meat and sausage product, vegetarian and vegan products or cheese and vegetable products. It is not necessary to switch feed system parts in the vacuum fillers when the product is changed, as the standard feed system is used for all products, irrespective of the cut size of the final hole plate. This enables the processing of very cold products, a high filling capacity of fine-grained end products or new production possibilities for raw sausage, fresh sausage and other coarse-grained products. Even separating and sieving applications for potato, vegetable and fruit products are possible.

The original PH cutting set ensures a gentle, precise and energy-efficient cutting process of the raw material in all applications with only minimal product heating. This is due to the optimum cutting set geometry, which ensures a gentle flow of the material through the hole plate. This, in turn, leads to a significant reduction in pressure within the grinder housing, resulting in a perfect product appearance with uniform grain size. The reduced friction provides additional product protection and hygiene benefits. The optimised pre-cutter geometry achieves the optimum flow of material into the Premium Handtmann cutting set. The asymmetrical blade arrangement on the premium blades then ensures an even cut. The mixing effect during the material flow is even more effective due to the recess on the back of every second blade. The streamlined design of the channel on the blade arms also guarantees the targeted drainage and discharge of gristle and sinew. The design of the cross-type support ensures that the support arms do not cover any holes on the final hole plate, thus the material flows freely over the entire free surface and smearing spots as well as deposits are avoided. The new cutting set is available for inline grinding systems GD 451 and GD 93-3, in hole plates with hole diameter 1.0 mm to 13 mm, 6-arm and 8-arm blades as well as 8-arm separating knives.

As an option, the PH cutting set can be equipped with a label to enable clear assignment to the respective vacuum filler and product. In combination with the HCU software solution, this enables smart cutting set management with full documentation, evaluation and management of the respective cutting set. The documented performance parameters and flow rates provide full transparency of the cutting process and consequently process reliability and product safety along with fault minimisation. In addition, the direction of installation for hole plates, cross-type support and blades is specified by a mechanical installation coding, so that the parts can only be inserted in the correct installation direction. This prevents incorrect installation and the corresponding consequential damage to parts and filling material and ensures a flawless production process with consistent results.
